Vegetable Pot Pie

I have been sad. Actually very sad and disappointed. Past few days have been a blur. As a silent and helpless bystander in the 2016 election campaign, I was so sure of its outcome. I mean, what was there to be unsure of? Never before has any presidential race been so one sided and never before had America been so sure of the outcome coz who in their right mind could vote for a sexist, racist, misogynist, homophobic, narcissist……..right?
But as the dawn of 9th November approached and I watched the results in horror, it seemed like an earthquake just shook the entire nation. Like it was supposed to be a beautiful 75 degrees that morning but instead a tsunami hit and destroyed everything that came along its way. Dramatic much? I don’t think so. Just to be clear, I am no Hillary fan nor do I think that she should have won coz it was high time a woman did or there was a glass ceiling to be broken as such. She is no sunny, beautiful 75 degrees but Trump is definitely a tsunami by all standards. He threw a lot of people (whose opinion wasn’t a turning point in this race) under the bus to impress the few who could change the outcome of this battle. And he won.

We can discuss as to why this tragedy happened and whose fault was it until the cows come home but then it won’t help us in any way. I just hope and pray that he rises up to the occasion and serves his term with the dignity and fairness this job demands of him. But before I made peace with this fact, I also can’t deny the truth that I was depressed. And Soups and breads helped me a lot these past few days. They always seem to lift me up instantly. And with winters sneaking in, there was a perfect excuse to make them too. This vegetable pot pie reminds me of bread and soup in one bowl. I loved it so much that I had it the next day too. Crispy pastry sheet on top and piping hot vegetables in a spicy broth inside is my new instant “pick me up”.

Vegetable Pot Pie

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 6 ramekins

Ingredients

  • 270 gms mixed Vegetables (Carrots, Mushroom, peas, Capsicum)
  • 2 tbsp. Butter
  • 2 tbsp. all purpose Flour
  • 1 tsp Salt
  • 1/2 tsp red Chili powder
  • 1/4 tsp black Pepper powder
  • 1 cup water
  • 1 cup Milk
  • 1/2 tsp red Chili flakes
  • 1 egg
  • 1 sheet Puff Pastry, at room temperature

Instructions

    For the white sauce
  1. Chop the vegetables into bite size pieces.
  2. In a pan, add butter and flour and let it cook until it turns slight pink.
  3. Add the vegetables and cook until softened. Add little water if needed.
  4. Add salt, red chili powder, pepper powder and chili flakes.
  5. Add water and milk and cook until the sauce is thick enough to coat the back of the spoon.
  6. Cover and keep aside.
    7. For the pie
  7. Whip the egg in a bowl with 1 tbsp. water. Keep the egg wash aside.
  8. Preheat the oven to 400 F.
  9. Roll the pastry until 1/4 inch thick. Cut 6 circles (bigger than the ramekins I baked my pot pies in) with a sharp bowl.
  10. Fill the ramekin with white sauce up till 3/4th full.
  11. Cover it with the round pastry sheet. Apply the egg wash on the outer edges of the ramekin to seal the pastry sheet well.
  12. Brush egg wash very generously on the top and around the pastry sheet on the ramekin.
  13. Prepare all 6 ramekins similarly.
  14. Bake for about 20 min or until puff pastry is golden brown.
  15. Enjoy hot.

Notes

A generous coating of egg wash gives beautiful shine to the pot pie but milk can be used instead.

  1. I had a question about Pot Pie – have never made it, but always worried about whether the bread becomes soggy.

    Because I saw some people use bread as the container too.

    In this method, the bread is not the container, I guess, just the cover?

    Have you tried with the bread being the container for any recipe?

    • yes, the bread is actually the pastry on top. It is very flakey and not soggy at all. As far as the bread bowl is concerned, the bread is much thicker and rustic than the normal bread and the key is to pour the hot soup in it just before serving.

  2. Yep, the country has chosen a disaster. Though I guess, the people did vote for Hillary, as she won the popular vote.

    But the way the system is set up, I think the electoral college gets to decide who wins, and Trump won the states, so he won.

    And yeah, we can hope that he rises up to the occasion, and that all that talk was just election-speak, but he is just SO underqualified and overconfident that it doesn’t seem likely.
